Looked at the numbers you stated, and the numbers are incorrect. For physical protection, you get 79 from inherent protections, 60 from Thebes, 30 from Lotus (base), 60 from Sov, and a variable 20 from Lotus when it is triggered. This is 229-249, not 184 physical protection.
The magical protection you list is also incorrect. At level 20, max magical protection will be 178-198 (combining 48 from inherent protections, 60 from Thebes, 70 from Heartward, and a variable 20 from Lotus when it is triggered).
I think some of the other stats are also off, so you might double-check that. You want to include the inherent values he gains at level 20 in your calculations.
As for the build, as a stock one it's generally okay, but not great without some options for variability. Sometimes you might want to get Sovereignty before Gauntlet of Thebes. Depending on the enemy comp, you might not get Heartward Amulet at all. You have no options for any counter items, such as Midgardian Mail, Witchblade, Hide of the Nemean Lion, or Pestilence. Depending on your team comp, you might even consider Void Stone. You also may want more than 20% CDR late-game.
As a stock build, again, it's okay, and goes along with your title, by giving teammates lots of additional protections. You might also consider delaying your ult leveling other than first level, if you can get good use out of your Verdant Growth's protection reduction.
One more thing...for your alternative start...it's really not suggested to go double chalices (with them being Healing and Mana, at least...if Oracle is one of the two, that's okay). If you're doing your thing right in duo, you'll find that Guardian's Blessing is going to provide you with plenty of general sustain. You get some added MP5 through an established Verdant Growth, and you've got your healing, which you'll generally prioritize first. Sylv is also not an initiator (except blink ults), so it's not like you're going to expect to take a lot of damage, though if you DO play aggressively that way, you probably would just get Healing, not Mana.
That 300 gold investment is also going to be wasted pretty quickly. After your first or 2nd back, you SHOULD be getting Wards, which means you'll have to sell a chalice. This means, definitely no-no on Healing + Mana chalices.
